Aji Verde Peruvian Green Sauce (Print-Friendly Version)

Creamy, zesty Peruvian green sauce with fresh herbs, jalapeños, and lime. Great for drizzling or dipping.

# Ingredients:

→ Base

01 - 2 jalapeño peppers, deseeded for mildness
02 - 1 cup cilantro leaves and stems, roughly chopped
03 - 2 green onions, green parts only
04 - 3 cloves garlic

→ Emulsifiers and Flavorings

05 - 120 ml mayonnaise
06 - 60 ml queso fresco, crumbled
07 - 15 ml fresh lime juice
08 - 5 ml white vinegar
09 - 2.5 ml adobo seasoning
10 - 15 ml olive oil

# Steps:

01 - Place jalapeños, cilantro, green onions, garlic, mayonnaise, queso fresco, lime juice, white vinegar, adobo seasoning, and olive oil in a blender or food processor.
02 - Blend the mixture until it becomes a mostly smooth, cohesive sauce with slight texture from the herbs.
03 - Taste and adjust with additional salt, lime juice, or adobo seasoning as desired.
04 - Transfer to a serving bowl and present with Peruvian roasted chicken, French fries, rice, or vegetables.

# Notes & Tips:

01 - Deseed jalapeños to control heat; leaving seeds will yield a spicier sauce.
02 - Aji Verde is best refrigerated for at least 30 minutes to allow flavors to develop.
