Soak chicken in buttermilk (and hot sauce, if using) for at least 30 minutes or overnight for best flavor.

Preheat oven to 400°F (200°C). Line a baking sheet with parchment and lightly grease.

Mix crushed cornflakes, paprika, garlic powder, salt, and pepper in a bowl.

Remove chicken from buttermilk, shake off excess, and dredge in the crunchy coating. Press to adhere.

Arrange coated chicken on the baking sheet. Spray tops with cooking spray. Bake for 25–30 minutes until golden and crispy, flipping halfway if desired.

While chicken bakes, warm honey in a saucepan over low heat. Stir in hot sauce, red pepper flakes, and a pinch of salt. Do not boil.
