Preheat oven to 200°C. In a large skillet or Dutch oven over medium heat, melt olive oil and butter. Add sliced onions and cook, stirring occasionally, until deeply caramelized and golden brown, approximately 20 minutes.

Pour in white wine to deglaze the pan, scraping up any browned bits with a wooden spoon. Stir in minced thyme and beef broth, then bring to a gentle simmer.

Add gnocchi to the skillet. Stir occasionally and simmer over medium heat until gnocchi becomes tender and the sauce reduces and thickens, about 5 to 10 minutes.

Adjust seasoning with salt and black pepper. Transfer gnocchi and onions with sauce into a lightly greased medium baking dish. Sprinkle evenly with shredded cheese.
