Combine pork cubes with salt, black pepper, garlic powder, and smoked paprika in a large bowl. Toss until each piece is evenly coated with seasoning.

Heat olive oil in a large skillet over medium-high heat. Add seasoned pork cubes and sear for 6–8 minutes, turning to brown all sides.

While the pork is searing, whisk together balsamic vinegar, Dijon mustard, honey or brown sugar, soy sauce, and minced garlic in a small mixing bowl.

Reduce heat to medium. Pour the balsamic glaze over the browned pork. Stir to coat the meat thoroughly and allow the sauce to simmer for 3–5 minutes, until thickened and glossy.

Remove skillet from heat. Serve the pork nuggets warm, optionally garnished with freshly chopped herbs.
