BBQ Pork Skewers Filipino Marinade (Print-Friendly Version)

Juicy pork skewers flavored with sticky, sweet, and spicy Filipino-inspired marinade, grilled to smoky perfection.

# Ingredients:

01 - 4 boneless thick-cut pork chops
02 - 8 large bamboo or metal skewers

→ Marinade

03 - 80 milliliters Coca-Cola
04 - 55 grams brown sugar
05 - 40 grams onion, finely chopped
06 - 60 milliliters soy sauce
07 - 60 milliliters tomato ketchup
08 - 60 milliliters apple cider vinegar
09 - 3 garlic cloves, minced
10 - 10 milliliters lemon juice
11 - 1.25 milliliters salt
12 - 1.25 milliliters ground black pepper
13 - 1.25 milliliters red pepper flakes
14 - 2.5 milliliters sriracha

# Steps:

01 - Slice each pork chop lengthwise into four even strips, yielding a total of sixteen strips.
02 - In a large bowl, whisk together Coca-Cola, brown sugar, onion, soy sauce, ketchup, apple cider vinegar, minced garlic, lemon juice, salt, black pepper, red pepper flakes, and sriracha until well combined.
03 - Reserve 25% of the marinade in the refrigerator for basting. Add pork strips to the remaining marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 4 hours or overnight.
04 - Thread 2 to 4 pork strips lengthwise onto each skewer, distributing the meat evenly.
05 - Preheat grill to medium heat. Lightly oil the grates to prevent sticking.
06 - Place pork skewers on the hot grill and close the lid. Grill, turning every 3 to 4 minutes and basting with reserved marinade, until pork is cooked through and an internal temperature of 71°C is reached. Adjust positioning if needed for uniform cooking.
07 - Remove pork skewers from the grill. Serve hot with your preferred side dishes.
