# Ingredients:

→ Biscuits

01 - 2 cups all-purpose flour
02 - 1 tablespoon baking powder
03 - 1 teaspoon salt
04 - 1 tablespoon granulated sugar
05 - ½ cup unsalted butter, cold and cubed
06 - ¾ cup buttermilk, cold
07 - 2 tablespoons melted butter (for brushing)

→ Gravy

08 - 1 pound breakfast sausage
09 - ¼ cup all-purpose flour
10 - 2 ½ cups whole milk
11 - Salt and black pepper to taste

# Steps:

01 - Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
02 - In a large bowl, whisk together flour, baking powder, salt, and sugar.
03 - Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
04 - Gradually add the cold buttermilk, stirring just until the dough comes together.
05 - Turn the dough out onto a floured surface and gently knead a few times. Pat or roll the dough to about ¾-inch thickness. Use a biscuit cutter to cut out biscuits and place them on the prepared baking sheet.
06 - Brush the tops with melted butter and bake for 12-15 minutes, until golden brown. Cool slightly on a wire rack.
07 - In a large skillet, cook the sausage over medium heat until browned and fully cooked, breaking it up into crumbles as it cooks.
08 - Sprinkle the flour over the sausage and stir to combine, cooking for about 1 minute.
09 - Gradually add the milk, stirring constantly, until the mixture is smooth and begins to thicken.
10 - Reduce heat and simmer for 5-7 minutes, stirring occasionally, until the gravy reaches the desired consistency. Season with salt and black pepper to taste.
11 - Split the warm biscuits in half and ladle the sausage gravy over the top. Serve immediately and enjoy.

# Notes & Tips:

01 - Keep the butter very cold to ensure flaky biscuits.
02 - Add the milk gradually to the gravy to avoid lumps.
03 - Adjust the gravy’s thickness by adding more milk if needed.
