Brownie Mix Cookies Fudgy Easy (Print-Friendly Version)

Chewy, fudgy cookies made from brownie mix, eggs, and oil, with chocolate chips in every bite.

# Ingredients:

→ Cookie Dough

01 - 59 ml neutral oil (vegetable, canola, or olive oil), or 57 g unsalted butter, melted
02 - 2 large eggs
03 - 510–522 g boxed brownie mix (recommended: Ghirardelli)
04 - 30 g all-purpose flour
05 - 85 g semi-sweet chocolate chips (omit if mix contains chocolate chips)

# Steps:

01 - Preheat the oven to 175°C. Line a baking sheet with parchment paper or a silicone baking mat.
02 - In a large bowl, whisk together neutral oil (or melted butter) and eggs until combined.
03 - Add the brownie mix and all-purpose flour to the wet ingredients. Mix thoroughly until a thick dough forms. The dough will be dense; continue to mix until fully incorporated.
04 - Stir semi-sweet chocolate chips into the dough, ensuring even distribution.
05 - Scoop portions of dough, about 2 tablespoons each, and place them 7–8 cm apart on the prepared baking sheet. Optionally, press extra chocolate chips or chopped chocolate onto the tops of each dough ball.
06 - Bake in the preheated oven for 10–12 minutes, or until the edges are set and the centers remain slightly soft.
07 - Allow cookies to cool completely on the baking sheet to maintain their fudgy texture before serving.

# Notes & Tips:

01 - For the richest chocolate flavor and fudgiest texture, use a high-quality brownie mix such as Ghirardelli. The gluten-free version yields comparable results.
