Bring a large pot of salted water to a boil. Cook rotini pasta until al dente, then drain and set aside.

Season chicken pieces with Cajun seasoning, salt, and black pepper. In a skillet over medium heat, cook the chicken in olive oil until browned and fully cooked. Remove and set aside.

In the same skillet, sauté minced garlic until fragrant. Lower heat and stir in cream cheese and heavy cream until smooth. Add additional Cajun seasoning to taste.

Return the cooked chicken and pasta to the skillet. Gently mix to coat everything evenly with the sauce.

Transfer the pasta mixture to a greased baking dish. Top with shredded cheddar cheese.

Bake at 375°F (190°C) for 20–25 minutes, or until the cheese is melted, golden, and bubbling.

Remove from oven and let rest for 5 minutes. Garnish with chopped parsley if desired and serve warm.
