Chicken Caesar Pasta Salad (Print-Friendly Version)

Hearty chicken, crisp greens, parmesan, and pasta tossed with a zesty, creamy Caesar-inspired dressing.

# Ingredients:

→ Dressing

01 - 2 teaspoons Dijon mustard
02 - 2 tablespoons freshly squeezed lemon juice
03 - 2 teaspoons Worcestershire sauce
04 - 180 millilitres mayonnaise
05 - 2 teaspoons minced garlic
06 - 1 teaspoon anchovy paste
07 - 30 grams finely grated Parmesan cheese
08 - 0.25 teaspoon freshly ground black pepper

→ Pasta Salad

09 - 225 grams uncooked pasta, such as rotini or penne
10 - 2 Romaine lettuce hearts
11 - 300 grams shredded rotisserie chicken or chopped cooked chicken breast
12 - Croutons, as desired
13 - Parmesan cheese, for serving

# Steps:

01 - In a medium bowl, whisk Dijon mustard, lemon juice, Worcestershire sauce, mayonnaise, minced garlic, anchovy paste, and black pepper until smooth. Stir in the finely grated Parmesan cheese and set aside.
02 - Bring a large pot of salted water to a boil. Add the pasta and cook for 10 minutes or until al dente. Drain thoroughly and transfer to a large serving bowl.
03 - Cut the Romaine hearts into 2.5-centimetre pieces. Add the chopped lettuce and shredded chicken to the bowl with the cooked pasta.
04 - Add the prepared dressing to the salad ingredients and toss until evenly coated. Top with croutons if desired and extra Parmesan cheese. Serve immediately or refrigerate covered until serving.
