Preheat oven to 175°C. Line a baking tray with parchment paper.

In a large mixing bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy.

Add the egg and vanilla extract to the mixture, beating until fully integrated.

In a separate bowl, whisk together all-purpose flour, baking soda, and salt.

Gradually fold the dry ingredients into the wet ingredients, mixing gently until just combined.

Split the dough evenly between two bowls. Add 30 mL cotton candy flavoring syrup to each. Tint one portion with pink food coloring and the other with blue food coloring, mixing until evenly coloured.

Pinch off equal portions of pink and blue dough and gently roll them together into balls. Arrange the dough balls on the prepared baking tray, spacing them evenly.

Bake for 8–10 minutes, until the cookie edges are set but centers remain soft.

Allow cookies to cool on the tray for several minutes, then transfer to a wire rack to cool completely. Garnish with cotton candy if desired just before serving.
