Crock Pot Creamy Chicken Parmesan (Print-Friendly Version)

# Ingredients:

01 - 2–3 boneless, skinless chicken breasts or thighs
02 - 4 cups (960 ml) low-sodium chicken broth
03 - 1 small yellow onion, finely chopped
04 - 3–4 garlic cloves, minced
05 - 1 teaspoon Italian seasoning
06 - 1/2 teaspoon crushed red pepper flakes (optional)
07 - 1 can (410 g) crushed tomatoes

08 - 1 cup (240 ml) heavy cream
09 - 1 cup (100 g) freshly grated Parmesan cheese
10 - 2 tablespoons (16 g) cornstarch mixed with 2 tablespoons (30 ml) cold water (optional, for thickening)
11 - Salt and freshly ground black pepper, to taste
12 - Fresh parsley, chopped, for garnish

# Steps:

01 - Place the chicken breasts or thighs in the base of the slow cooker. Add the finely chopped onion and minced garlic.
02 - Sprinkle Italian seasoning and, if desired, crushed red pepper flakes over the chicken and aromatics. Pour in the crushed tomatoes.
03 - Pour in the chicken broth. Cover and cook on low for 6–7 hours or on high for 3–4 hours until the chicken is fully cooked and tender.
04 - Remove the cooked chicken from the pot. Shred the meat using two forks, then return the shredded chicken to the slow cooker.
05 - Stir in the heavy cream, mixing thoroughly to combine.
06 - If desired, mix the cornstarch and cold water to form a slurry. Stir the slurry into the soup and cook for several minutes until slightly thickened.
07 - Gradually add the freshly grated Parmesan cheese, stirring constantly until fully melted and the soup is smooth.
08 - Cook uncovered on low for an additional 20–30 minutes to allow the flavors to meld.
09 - Season the soup with salt and freshly ground black pepper to taste. Ladle into bowls and garnish with chopped fresh parsley before serving.
