Fried Egg Grilled Cheese (Print-Friendly Version)

Golden fried eggs and double cheese toasted between thick, buttery Texas bread for a hearty breakfast classic.

# Ingredients:

→ Main ingredients

01 - 4 large eggs
02 - 4 slices thick Texas-style bread
03 - 2 slices Colby Jack cheese
04 - 2 slices pepper jack cheese
05 - Butter for cooking and spreading
06 - Salt and black pepper, to taste

# Steps:

01 - Spread butter generously on one side of each bread slice. Set aside, buttered-side up.
02 - Heat a small amount of butter in a frying pan over low heat. Crack in the eggs and fry to your preferred doneness. Season with salt and black pepper. Remove from pan and set aside.
03 - Place one slice of bread, buttered-side down, in a separate frying pan over medium-low heat. Lay a slice of Colby Jack cheese on top of the bread.
04 - Place two fried eggs on top of the Colby Jack cheese, then cover the eggs with a slice of pepper jack cheese.
05 - Place a second slice of bread on top, buttered-side up. Cover the pan with a lid to encourage even cheese melting.
06 - Cook until the bottom is golden brown and cheese begins to melt, then gently flip. Continue cooking until the second side is golden and cheese is fully melted.
07 - Repeat the assembly and grilling steps with the remaining ingredients to prepare the second sandwich. Serve piping hot with melted cheese.

# Notes & Tips:

01 - Choosing thick Texas-style bread provides sturdiness and prevents sogginess from the fried eggs.
02 - Covering the pan while grilling encourages thorough cheese melting and crisps the bread evenly.
03 - Adjust the eggs’ cook time to achieve runny or set yolks according to preference.
04 - The blend of Colby Jack and pepper jack cheese yields a balanced combination of creaminess and gentle spice.
