Spread butter generously on one side of each bread slice. Set aside, buttered-side up.

Heat a small amount of butter in a frying pan over low heat. Crack in the eggs and fry to your preferred doneness. Season with salt and black pepper. Remove from pan and set aside.

Place one slice of bread, buttered-side down, in a separate frying pan over medium-low heat. Lay a slice of Colby Jack cheese on top of the bread.

Place two fried eggs on top of the Colby Jack cheese, then cover the eggs with a slice of pepper jack cheese.

Place a second slice of bread on top, buttered-side up. Cover the pan with a lid to encourage even cheese melting.

Cook until the bottom is golden brown and cheese begins to melt, then gently flip. Continue cooking until the second side is golden and cheese is fully melted.

Repeat the assembly and grilling steps with the remaining ingredients to prepare the second sandwich. Serve piping hot with melted cheese.
