Pat steak cubes dry and season generously with salt and freshly ground black pepper on all sides.

Heat olive oil and 28 g butter in a large skillet over medium-high heat. Once butter has melted and is foaming, add steak cubes in a single layer.

Cook steak for 3–4 minutes, turning to brown all surfaces until desired doneness is reached. Remove browned steak bites from skillet and set aside.

Return the skillet to medium heat. Add remaining 28 g butter. Stir in minced garlic, thyme, rosemary, and parsley. Sauté for 1 minute until fragrant.

Return steak bites to skillet and toss to coat in the garlic herb butter. Cook for an additional 1–2 minutes, then remove from heat and set aside.

In a separate skillet over medium heat, melt 14 g butter.

Add minced garlic and sauté for 1 minute until aromatic.

Pour in heavy cream, bring to a gentle simmer, and stir occasionally.

Add grated Parmesan cheese and Italian seasoning. Stir continuously until cheese has melted and sauce is smooth.

Season the sauce with salt and pepper to taste. Simmer for 2–3 minutes, stirring, until slightly thickened.

Pour the Parmesan cream sauce over the steak bites or serve alongside as a dipping sauce. Garnish with extra parsley if desired and serve immediately.
