In a bowl, whisk together olive oil, lemon juice, honey, garlic, seasonings, and Parmesan. Add chicken and toss to coat. Cover and marinate for at least 30 minutes, up to 4 hours for maximum flavor.

Heat grill to medium-high. Lightly oil the grates to prevent sticking.

Remove chicken from marinade, letting excess drip off. Grill for 5–7 minutes per side, or until the internal temperature reaches 165°F (75°C) and juices run clear.

In the last 1–2 minutes of grilling, sprinkle more Parmesan over the top to let it melt slightly.

Remove the chicken from the grill and let it rest for 5 minutes. Garnish with fresh parsley and extra Parmesan if desired.
