Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for about 5 minutes until softened and translucent.

Add ground beef to the skillet, breaking it apart. Sauté until fully browned. Season with salt, pepper, smoked paprika, and dried oregano. Stir well to combine and let the spices cook for 1 minute.

Pour in the tomato sauce. Reduce heat and simmer for 5 minutes, allowing the flavors to meld. Remove from heat and set aside.

Lay each flour tortilla flat. Spread approximately 1 tablespoon of spicy mayonnaise down the center of each tortilla.

Add a spoonful of fried rice, drizzle with nacho cheese sauce, add a dollop of sour cream, and sprinkle with crushed tortilla chips. Top with a generous portion of the seasoned ground beef.

Fold in the sides of each tortilla and roll tightly from the bottom. Heat a non-stick skillet over medium heat. Optionally sprinkle shredded Mexican cheese blend onto the skillet. Place burritos seam-side down on the skillet, grilling for 2-3 minutes per side until golden and crisp.

Slice and serve the burritos hot with additional spicy mayonnaise for dipping.
