Haluski Egg Noodles (Print-Friendly Version)

Egg noodles blended with caramelized bacon, sweet onions, and tender cabbage for a hearty, comforting classic dish.

# Ingredients:

01 - 12 oz egg noodles (about 340 grams, 1 standard package).
02 - 8 tablespoons unsalted butter.
03 - ¾ cup bacon, diced small.
04 - 1 cup kielbasa sausage, sliced thinly into half-moons (optional).
05 - 2 large yellow onions, diced small.
06 - 2 cloves garlic, minced (optional).
07 - ½ head cabbage, sliced very thinly.
08 - Salt and pepper, to taste.

# Steps:

01 - Thinly slice the cabbage, dice the onions and bacon into small pieces, slice the kielbasa (if using) into half-moons, mince the garlic (if using), and bring a large pot of salted water to a boil for the egg noodles.
02 - Cook the pasta according to package instructions while preparing other ingredients. If finished early, drain, cool under running water, and toss with a little butter to prevent sticking.
03 - In half of the butter, caramelize the onions over medium heat. Once translucent (about 5 minutes), add the bacon, reduce the heat to low, and cook until the onions are golden-brown and the bacon is nearly crisp.
04 - If using kielbasa, add it to the pan. Cook until the sausage browns around the edges.
05 - Add the cabbage and cook, stirring, until tender and starting to brown at the edges. Cover the pan to prevent evaporation but uncover it to cook off excess liquid before adding noodles.
06 - If using garlic, add it and stir for 60 seconds until fragrant.
07 - Add the cooked egg noodles and stir until the noodles are slightly crispy at the edges.
08 - Season with salt and freshly cracked black pepper to taste. Serve immediately.
