Hocus Pocus S'mores Pops (Print-Friendly Version)

Chocolate-coated s'mores with marshmallow cream and candy eyes, simple and festive for quick treats.

# Ingredients:

→ Base

01 - 12 graham crackers, halved

→ Filling

02 - 1/2 cup marshmallow crème

→ Coating

03 - 2 cups semisweet chocolate chips
04 - 3 tablespoons coconut oil

→ Decoration

05 - 1 bag candy eyes
06 - 1 container black cookie frosting

# Steps:

01 - Spread 1 tablespoon marshmallow crème on each half of the graham crackers. Insert a popsicle stick halfway into the crème on one half to create a handle, then top with the other half to form a sandwich. Arrange on a parchment-lined baking sheet and freeze while preparing chocolate coating.
02 - Melt semisweet chocolate chips and coconut oil in a microwave-safe bowl in 20-second increments, stirring between each until smooth and fully melted, approximately 1 minute.
03 - Submerge each frozen graham cracker sandwich into the melted chocolate, fully coating all sides. Use a spatula or butter knife as needed to ensure even coverage. Adhere one candy eye on each sandwich about halfway down on the far right side. Place back on the baking sheet and refrigerate until the chocolate hardens, about 15 minutes.
04 - Use black cookie frosting to outline a circle around each candy eye, draw two semicircles on the outer corners of the sandwich, and create stitch marks across the chocolate coating to mimic a spellbook design.
05 - Refrigerate the decorated sandwiches until the frosting and chocolate are fully set, at least 15 minutes before serving.

# Notes & Tips:

01 - Freezing the sandwiches before dipping helps the chocolate coating set quickly and minimizes melting.
