# Ingredients:

→ Hot Honey

01 - 110g honey
02 - 1 1/2 tsp hot sauce
03 - 3/4 tsp chili flakes

→ Chicken and Coating

04 - 2 chicken breasts (250g each)
05 - 2 tsp paprika
06 - 1 tsp salt
07 - 1/2 tsp onion powder
08 - 1/2 tsp garlic powder
09 - 1/2 tsp dried oregano
10 - 1/2 tsp black pepper
11 - 1/4 tsp cayenne pepper
12 - 35g plain flour
13 - 2 eggs, beaten
14 - 65g Panko breadcrumbs
15 - Vegetable oil, for frying

→ Topping

16 - 200g feta cheese, crumbled

# Steps:

01 - Combine honey, hot sauce, and chili flakes in a small bowl. Microwave for 20 seconds or simmer on the stove. Let cool before setting aside for later drizzle.
02 - Slice chicken breasts horizontally to create four evenly-sized pieces for faster cooking.
03 - Combine paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper in a small bowl. Divide the mix into two portions.
04 - Prepare three dishes: seasoned flour (first portion of spices), beaten eggs, and Panko breadcrumbs (mixed with remaining spices).
05 - Dredge chicken in seasoned flour, dip into eggs, then coat with Panko. Place on a tray in preparation for frying.
06 - Heat vegetable oil in a large pan over medium-high heat. Fry chicken for 3-4 minutes per side until golden brown and cooked through. Fry in batches if necessary.
07 - Place fried chicken on a wire rack. Top generously with crumbled feta and grill until cheese melts and edges turn golden.
08 - Drizzle cooled hot honey over the feta-topped chicken. Serve immediately. Store extra hot honey in the fridge for later use.

# Notes & Tips:

01 - Let the hot honey cool before drizzling to ensure proper texture.
02 - Ensure the oil is hot enough before frying for a crispy finish.
03 - Use a generous amount of feta to achieve optimal melting and golden edges.
