Mediterranean Ground Beef Stir Fry (Print-Friendly Version)

Ground beef, bright vegetables, and spices create a quick Mediterranean-inspired skillet dinner.

# Ingredients:

01 - 450 g lean ground beef (85% lean recommended)
02 - 2 tablespoons olive oil
03 - 1 red bell pepper, thinly sliced
04 - 1 yellow bell pepper, thinly sliced
05 - 1 zucchini, halved and sliced into half-moons
06 - 1 red onion, thinly sliced
07 - 3 cloves garlic, minced
08 - 250 g cherry tomatoes, halved
09 - 60 g baby spinach
10 - 1 teaspoon dried oregano
11 - 0.5 teaspoon ground cumin
12 - 0.5 teaspoon smoked paprika
13 - Salt and pepper, to taste
14 - Juice of 1 lemon
15 - 60 g feta cheese, crumbled
16 - 2 tablespoons fresh parsley, chopped (optional for garnish)

# Steps:

01 - Heat olive oil in a large skillet over medium heat. Add ground beef and cook, breaking up with a spoon, until browned. Remove beef from pan and set aside.
02 - In the same skillet, add red onion and garlic. Sauté for 2–3 minutes until fragrant and softened.
03 - Add sliced bell peppers and zucchini to the skillet. Cook for 5–6 minutes, stirring occasionally, until the vegetables begin to soften.
04 - Stir in halved cherry tomatoes and baby spinach. Continue cooking until the spinach is wilted, about 2 minutes.
05 - Return the cooked ground beef to the skillet. Add dried oregano, ground cumin, smoked paprika, salt, and pepper. Mix thoroughly to evenly coat all ingredients.
06 - Squeeze lemon juice over the stir-fry. Sprinkle with crumbled feta and chopped parsley just before serving. Serve hot.
