09 - 3 cups whipped topping, divided

# Steps:

01 - Place Nilla wafers and pumpkin pie spice into a food processor and pulse until fine crumbs form. Remove 2 tablespoons of the mixture and set aside for garnish. Add melted butter to the remaining crumbs in the processor and pulse until combined. Press the crust evenly into the bottom and slightly up the sides of a 9-inch springform pan. Cover and freeze to set.
02 - In a large bowl, beat the softened cream cheese and dark brown sugar together until light and fluffy. Add pumpkin puree, vanilla extract, and pumpkin pie spice. Mix until fully combined, scraping the bowl sides as needed. Gently fold in 3 cups of whipped topping until smooth and incorporated.
03 - Remove crust from freezer and transfer the cheesecake filling into the springform pan. Use an offset spatula to smooth the surface. Refrigerate for at least 6 hours or overnight to allow the cheesecake to set completely.
04 - Before serving, spread or pipe the remaining whipped topping over the cheesecake. Sprinkle reserved crust crumbs and a pinch of pumpkin pie spice on top. Remove the springform rim, slice, and drizzle with caramel sauce if desired.
