Set oven to 175°C. In a large mixing bowl, beat together softened butter, peanut butter, brown sugar, and granulated sugar until light and creamy. Add the egg and vanilla extract, mixing until smooth.

In a separate bowl, combine all-purpose flour, baking soda, and salt. Gradually incorporate the dry mixture into the wet ingredients until well blended. Add the mini chocolate chips and mix just to distribute evenly.

Lightly grease a mini muffin tray. Shape dough into 2.5 cm balls and place one into each cup. Bake in preheated oven for 10 to 12 minutes, or until tops are lightly golden.

Immediately after baking, gently press a mini peanut butter cup into the center of each cookie while still warm. Allow cookies to cool in the tray for 10 minutes, then transfer to a wire rack to cool completely.
