Chicken and Potatoes Slow Cooker (Print-Friendly Version)

A wholesome one-pot dinner with tender chicken, buttery potatoes and fresh green beans, all cooked to perfection in your slow cooker.

# Ingredients:

01 - 1 onion, diced
02 - 2 pounds chicken breast
03 - 1 pound green beans
04 - 1.5 pounds Yukon gold potatoes
05 - 2 tablespoons Italian dressing mix
06 - 2 tablespoons butter, melted

# Steps:

01 - Place the diced onion on the bottom of the slow cooker. Add the chicken breast over the onion.
02 - Season the chicken with half of the Italian dressing mix.
03 - Cut the potatoes into bite-sized chunks and place them on one side of the slow cooker over the chicken. Place the green beans over the other side of the chicken.
04 - Sprinkle the rest of the Italian dressing mix over the top of the potatoes and green beans, then drizzle the melted butter over everything.
05 - Cover the slow cooker with the lid and cook on high for 3.5-4 hours, or on low for 4.5-5 hours.

# Notes & Tips:

01 - Chicken thighs can be used as a substitute for chicken breasts. Carrots can replace green beans.
02 - Leftovers can be stored in an airtight container for up to 4 days in the refrigerator.
03 - This dish freezes well and can be frozen before or after cooking. Reheat in the microwave in 30-second increments, or in the oven covered with foil.
04 - To feed a crowd, double the recipe and use a large or extra-large slow cooker.
