Smothered Chicken with Creamed Spinach (Print-Friendly Version)

Juicy chicken smothered in creamy spinach sauce, ideal alongside rice, potatoes, or crusty bread.

# Ingredients:

→ Chicken

01 - 4 boneless, skinless chicken breasts
02 - 1 teaspoon garlic powder
03 - 1 teaspoon paprika
04 - 0.5 teaspoon salt
05 - 0.5 teaspoon ground black pepper
06 - 2 tablespoons olive oil

→ Creamed Spinach

07 - 2 tablespoons unsalted butter
08 - 3 cloves garlic, minced
09 - 60 grams fresh spinach, chopped
10 - 240 millilitres heavy cream
11 - 50 grams grated Parmesan cheese
12 - 0.5 teaspoon ground nutmeg (optional)
13 - Salt, to taste
14 - Ground black pepper, to taste

15 - Additional grated Parmesan cheese
16 - Chopped fresh parsley

# Steps:

01 - Pat chicken breasts dry with paper towels. Sprinkle both sides evenly with garlic powder, paprika, salt, and black pepper.
02 - Heat olive oil in a large skillet over medium heat. Place chicken breasts in the skillet and sear for 4–5 minutes per side until golden brown and cooked through (internal temperature 74°C). Transfer chicken to a plate and set aside.
03 - In the same skillet, melt unsalted butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
04 - Add chopped spinach to the skillet. Cook, stirring, for 2–3 minutes until spinach is wilted.
05 - Reduce heat to low. Pour in heavy cream and stir in grated Parmesan and nutmeg (if using). Simmer gently for 3–5 minutes, stirring occasionally, until slightly thickened. Season the sauce with salt and black pepper to taste.
06 - Return seared chicken breasts to the skillet, spooning the creamed spinach sauce over each piece. Cover and simmer for 5 minutes to allow flavors to merge.
07 - Finish with additional Parmesan cheese and chopped parsley. Serve hot with desired accompaniments.

# Notes & Tips:

01 - For a gratinéed finish, top with shredded mozzarella or Gruyère and broil for 2–3 minutes until golden and bubbling.
02 - Frozen spinach (thawed and well-drained) can replace fresh spinach if needed.
03 - Leftovers keep in the refrigerator for up to 3 days. Reheat gently over low heat.
