Thick Chewy Chocolate Brownies (Print-Friendly Version)

Thick, chewy brownies with chocolate chips that outshine any store-bought mix. Rich, fudgy texture with a perfect crackly top.

# Ingredients:

→ Dry Ingredients

01 - 1/2 cup all purpose flour
02 - 3/4 cup unsweetened cocoa powder
03 - 1 1/4 cup sugar
04 - 1/8 tsp baking soda
05 - 1 tbsp cornstarch
06 - 1/4 tsp salt

→ Wet Ingredients

07 - 11 tbsp unsalted butter (1 stick + 3 tbsp)
08 - 2 cold eggs
09 - 1 tsp vanilla extract

→ Mix-ins

10 - 1/2 cup milk or semisweet chocolate chips
11 - 1/4 cup chopped semi-sweet baking bar

# Steps:

01 - Preheat oven to 325°F (163°C). Line an 8x8-inch pan with parchment or foil and set aside.
02 - In a microwave-safe bowl, combine butter and sugar. Heat in the microwave on HIGH for about 1 minute and 15 seconds. Remove, stir, and cool on the counter for 5 minutes, then stir in the vanilla extract and cocoa powder.
03 - Transfer the warm (but not hot) butter/sugar mixture to the bowl of a stand mixer. With the mixing speed on low, add one egg at a time, mixing just until incorporated.
04 - In a medium-sized mixing bowl, whisk together flour, baking soda, cornstarch, and salt. With mixing speed on low, gradually add the dry ingredients to the wet mixture. Mix until no flour pockets remain.
05 - Remove the bowl from the stand mixer and fold in the chocolate chips and chunks.
06 - Spread the brownie batter evenly into the prepared pan. Bake for 20-30 minutes or until the brownies are set. Remove from oven and allow to cool for 30-45 minutes before cutting and serving.

# Notes & Tips:

01 - Ghirardelli baking bars are recommended for the chopped chocolate.
02 - This recipe can be doubled to fit a 9x13-inch pan. The bake time might increase by 3-5 minutes and will yield approximately 24 brownies.
03 - A metal pan is recommended rather than Pyrex.
04 - 1/2 cup of cake flour can be substituted for the all-purpose flour and cornstarch.
05 - Store brownies in an airtight container at room temperature for up to 4 days.
06 - To freeze, wrap brownies tightly in plastic wrap and then in foil for up to 3 months.
07 - To reheat, unwrap the brownies and microwave on high for 10-20 seconds.
