# Ingredients:

→ Primary

01 - 2 tablespoons olive oil
02 - 1 cup onion, diced
03 - 3 cloves garlic, minced
04 - 2 tablespoons chili powder
05 - 1 teaspoon ground cumin
06 - 2 pounds (900 g) ground turkey, 93/7 lean
07 - 2 teaspoons kosher salt
08 - 1 teaspoon freshly ground black pepper
09 - 1.5 cups low-sodium chicken broth, divided
10 - 800 g crushed tomatoes, canned
11 - 425 g black beans, drained
12 - 440 g kidney beans, drained
13 - 1/4 cup masa flour (Maseca recommended)

→ Garnish

14 - Fresh cilantro, chopped

# Steps:

01 - Heat olive oil in a large pot over medium heat. Add diced onions and cook until they begin to soften, about 3 minutes. Stir in minced garlic and sauté for 1 minute until fragrant.
02 - Add chili powder and ground cumin to the pot. Stir continuously and cook for 1 minute to release the flavors of the spices.
03 - Increase heat to medium-high. Add ground turkey, breaking it apart with a spoon as it cooks. Cook until turkey is browned and no longer pink, seasoning with kosher salt and freshly ground black pepper.
04 - Pour in 1 cup of chicken broth. Add crushed tomatoes, black beans, and kidney beans. Stir to combine. Cover the pot, lower heat to maintain a gentle simmer, and cook for 20 minutes, stirring occasionally.
05 - In a small bowl, combine masa flour with the remaining 1/2 cup chicken broth, mixing until smooth. Stir the masa mixture into the pot. Simmer uncovered for several minutes until the chili reaches a thick consistency.
06 - Remove from heat. Top with chopped fresh cilantro and any preferred garnishes before serving.

# Notes & Tips:

01 - For extra depth of flavor, consider toasting the chili powder and cumin for a full minute before adding turkey.
02 - The masa flour mixture enhances thickness and imparts a subtle corn flavor distinctive to Southwestern cuisine.
