White Chicken Chili (Print-Friendly Version)

Creamy, hearty chili featuring tender chicken, white beans, sweet corn and mild chilies with a perfect blend of spices.

# Ingredients:

→ Chili Base

01 - 1 lb boneless, skinless chicken breasts
02 - 6 cups chicken broth
03 - 2 cans (15.5 oz each) cannellini beans, drained
04 - 1 can (15.25 oz) whole kernel sweet corn, drained
05 - 2 cans (4 oz each) mild green chilies
06 - 8 oz cream cheese, softened
07 - 1/3 cup half and half
08 - 3 tablespoons butter
09 - 2 teaspoons hot sauce
10 - 1 teaspoon Worcestershire sauce
11 - 1 large jalapeño pepper, seeded and diced
12 - 1 yellow onion, diced

→ Seasoning Blend

13 - 1 teaspoon chili powder
14 - 1/2 teaspoon salt
15 - 1/2 teaspoon ground cumin
16 - 1/2 teaspoon mustard powder
17 - 1/2 teaspoon dried oregano
18 - 1/4 teaspoon black pepper
19 - 1/4 teaspoon cayenne pepper
20 - 1/4 teaspoon red pepper flakes

# Steps:

01 - Combine all seasoning ingredients in a small bowl and set aside.
02 - Melt butter in a 4 1/2-quart pot over medium heat. Add diced onions and jalapeño pepper, cooking for 5 minutes until softened.
03 - Gradually incorporate chicken broth while stirring constantly, then add half and half using the same technique.
04 - Add cannellini beans (or optionally blend 1 heaping cup of beans with 1/2 cup broth for a thicker consistency). Incorporate the prepared seasoning blend, hot sauce, Worcestershire sauce, and green chilies.
05 - Bring mixture to a gentle boil and cook uncovered for 15 minutes, then reduce to a simmer.
06 - Season chicken breasts with salt and pepper on both sides. Add chicken and corn to the pot, simmering uncovered for 15-20 minutes, stirring occasionally to prevent beans from sticking.
07 - Remove cooked chicken, shred it with two forks, then return to the pot. Reduce heat to low and stir in softened cream cheese until completely melted and incorporated.
08 - Taste and adjust seasonings as needed before serving.

# Notes & Tips:

01 - For a thicker consistency, blend 1 cup of the beans with some broth before adding to the pot.
02 - Serve with cornbread for a complete meal.
03 - Frozen corn can be substituted for canned corn if preferred.
