French Dip Tortilla Roll Ups (Print-Friendly Version)

Flour tortillas layered with cheese, roast beef, and fried onions, baked until crisp and served with flavorful au jus.

# Ingredients:

01 - 4 large 12-inch flour tortillas
02 - 4 slices provolone cheese
03 - 8 oz deli-sliced roast beef, freshly sliced
04 - 1 cup French fried onions
05 - 2 tablespoons extra virgin olive oil

→ Au Jus

06 - 1 cup beef consommé
07 - ½ cup water
08 - 1 tablespoon Worcestershire sauce
09 - 1 teaspoon low sodium soy sauce
10 - ½ teaspoon onion powder
11 - ½ teaspoon garlic powder

# Steps:

01 - Set the oven to 425°F and line a rimmed baking sheet with parchment paper to ensure even browning and easy cleanup.
02 - Lay each tortilla flat. Layer one slice of provolone cheese, 2 oz roast beef, and an open handful of French fried onions on one side. Roll tightly without tearing. Brush the closing edge lightly with olive oil to seal.
03 - Place the four roll ups seam side down on the prepared baking sheet. Brush the tops and sides lightly with olive oil to promote crispness and golden color during baking.
04 - Bake in the preheated oven for 8 to 10 minutes until the outside is lightly browned and the cheese is melted and bubbly at the seams.
05 - While baking, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a small saucepan. Heat over medium heat, whisking occasionally, until hot and fragrant.
06 - Remove roll ups from oven and let rest for 2 minutes. Slice crosswise into halves or thirds. Serve on a platter alongside the au jus for dipping.
