Roast Beef Tortilla Rollups (Print-Friendly Version)

Savory roast beef wrapped in tortillas with cream cheese, spinach and cheddar - an easy, delicious appetizer or lunch option.

# Ingredients:

→ Cream Cheese Spread

01 - 8 ounces whipped cream cheese
02 - 2 stalks diced green onions
03 - 1 teaspoon Italian seasoning
04 - ½ teaspoon garlic salt
05 - ½ teaspoon black pepper

→ Tortilla Rollup Ingredients

06 - 5 large tortilla wraps
07 - 1½ pounds sliced roast beef, delicatessen style
08 - 2 cups baby spinach
09 - 1½ cups shredded cheddar cheese

# Steps:

01 - In a small mixing bowl, mix together 8 ounces whipped cream cheese, 2 stalks diced green onions, 1 teaspoon Italian seasoning, ½ teaspoon garlic salt, and ½ teaspoon black pepper. Set aside.
02 - Evenly distribute the cream cheese spread on each of the 5 large tortilla wraps. Place 2–3 slices of roast beef on each tortilla. Spread 2 cups of baby spinach over the roast beef. Sprinkle 1½ cups shredded cheddar cheese evenly across the spinach.
03 - Roll each tortilla up tightly. Slice into rollups and serve immediately, or wrap the rolled tortillas in plastic wrap and refrigerate to slice and serve later.

01 - The cream cheese spread can be made up to 2 days in advance and stored in an airtight container in the refrigerator.
02 - For make-ahead wraps, store rolled tortillas in plastic wrap in the fridge overnight before slicing.
