Florida Shrimp Pie (Print-Friendly Version)

# Ingredients:

→ Crust

01 - 1 frozen deep-dish pie crust (12 oz package, 2-count Pillsbury™ Deep Dish Pie Crusts)

→ Filling

02 - ½ cup chive-and-onion cream cheese spread (8 oz container)
03 - 4 large eggs
04 - 12 oz frozen cooked medium shrimp, thawed, deveined, peeled, coarsely chopped, tails removed
05 - ½ cup shredded pepper Jack cheese (approximately 2 oz)

# Steps:

01 - Position a cookie sheet on the center rack and preheat oven to 375°F. Remove one pie crust from packaging; let thaw at room temperature for 10 to 20 minutes. Prick bottom and sides of crust thoroughly with a fork to avoid air pockets. Place crust on cookie sheet and bake for 9 to 11 minutes until lightly golden. Remove and let cool slightly.
02 - In a medium bowl, beat cream cheese using a whisk or hand mixer until smooth. Add eggs one at a time, beating thoroughly after each addition to combine evenly. Fold in chopped shrimp and shredded pepper Jack cheese until incorporated uniformly.
03 - Pour filling into the pre-baked pie crust and spread evenly for uniform baking.
04 - Place the assembled pie on the cookie sheet and bake at 375°F for 30 to 35 minutes, or until filling is set in the center and top is lightly browned.
05 - Remove pie from oven and let rest at room temperature for 15 minutes to allow filling to firm. Slice and serve warm.
