Position a cookie sheet on the center rack and preheat oven to 375°F. Remove one pie crust from packaging; let thaw at room temperature for 10 to 20 minutes. Prick bottom and sides of crust thoroughly with a fork to avoid air pockets. Place crust on cookie sheet and bake for 9 to 11 minutes until lightly golden. Remove and let cool slightly.

In a medium bowl, beat cream cheese using a whisk or hand mixer until smooth. Add eggs one at a time, beating thoroughly after each addition to combine evenly. Fold in chopped shrimp and shredded pepper Jack cheese until incorporated uniformly.

Pour filling into the pre-baked pie crust and spread evenly for uniform baking.

Place the assembled pie on the cookie sheet and bake at 375°F for 30 to 35 minutes, or until filling is set in the center and top is lightly browned.
