Greek Fries with Feta (Print-Friendly Version)

Crispy Yukon potatoes seasoned with Mediterranean herbs, topped with fresh parsley, red onion, and crumbled feta cheese.

# Ingredients:

→ Fries

01 - 4 large Yukon Gold potatoes
02 - 3 tablespoons olive oil
03 - 1 teaspoon salt
04 - 1/2 teaspoon oregano
05 - 1/2 teaspoon dried dill
06 - 1/2 teaspoon black pepper
07 - 1/2 teaspoon garlic powder

→ Toppings

08 - 1/2 cup fresh parsley, finely chopped
09 - 1 medium red onion, finely chopped
10 - 1/4 cup feta cheese, crumbled
11 - Tzatziki, aioli or lemon wedges, for serving (optional)

# Steps:

01 - Preheat the oven to 220°C (425°F).
02 - Wash the potatoes, leaving the skins on, and cut them into 8mm (1/3-inch) wide sticks. Maintain uniform length for even cooking.
03 - Place the potato sticks in a large bowl of cold water and soak for 10-15 minutes. Drain and thoroughly pat dry with paper towels.
04 - In a large mixing bowl, toss the dried potato sticks with olive oil, salt, dried oregano, dried dill, black pepper, and garlic powder until evenly coated.
05 - Line a baking sheet with parchment paper and spread the seasoned potatoes in a single, even layer, ensuring they don't overlap.
06 - Bake for 15 minutes, then carefully flip the fries. Return to oven and continue baking for an additional 6-8 minutes, until crisp and golden brown.
07 - Transfer the baked fries to a serving plate and immediately sprinkle with chopped parsley, red onion, and crumbled feta cheese.
08 - Serve warm with optional tzatziki, aioli, and/or lemon wedges on the side.
