Heat oven to 220°C and line a baking sheet with parchment paper.

In a large bowl, combine the diced sweet potatoes with olive oil, chipotle chili powder, smoked paprika, garlic powder, salt, and black pepper. Toss until all pieces are evenly coated.

Arrange the seasoned sweet potatoes in a single even layer on the prepared baking sheet.

Roast in the centre of the oven for 25–30 minutes, flipping halfway through, until the edges are caramelized and the centres are tender.

Transfer roasted sweet potatoes to a serving dish. Optionally, garnish with chopped cilantro and a squeeze of fresh lime juice. Serve warm.
