Smoky Chipotle Sweet Potatoes (Print-Friendly Version)

Bold, smoky sweet potatoes with chipotle, ideal as a flavorful side for tacos, grain bowls or grilled dishes.

# Ingredients:

01 - 2 large sweet potatoes, peeled and diced into 2.5 cm cubes
02 - 2 tablespoons olive oil
03 - 1 to 2 teaspoons chipotle chili powder, to taste
04 - 0.5 teaspoon smoked paprika
05 - 0.5 teaspoon garlic powder
06 - 0.5 teaspoon salt
07 - 0.25 teaspoon black pepper
08 - Chopped fresh cilantro and lime wedges, for optional garnish

# Steps:

01 - Heat oven to 220°C and line a baking sheet with parchment paper.
02 - In a large bowl, combine the diced sweet potatoes with olive oil, chipotle chili powder, smoked paprika, garlic powder, salt, and black pepper. Toss until all pieces are evenly coated.
03 - Arrange the seasoned sweet potatoes in a single even layer on the prepared baking sheet.
04 - Roast in the centre of the oven for 25–30 minutes, flipping halfway through, until the edges are caramelized and the centres are tender.
05 - Transfer roasted sweet potatoes to a serving dish. Optionally, garnish with chopped cilantro and a squeeze of fresh lime juice. Serve warm.

01 - For a spicier result, add a pinch of cayenne pepper to the seasoning blend.
02 - Leftover roasted sweet potatoes can be refrigerated for up to 4 days and reheated in a skillet or toaster oven.
